Day #9 - parfaits & salads, library & bookstore, and loose teeth!

Today was a day of both planned and unplanned events.

We began the day with Orange Yogurt Parfaits:
1 cup homemade plain yogurt
1/2 tsp vanilla extract
1 tsp ground flax
1 orange, peeled and sliced, divided
1 tbsp unsweetened dried cranberries (Mark had cranberries...Jaymi chose raisins because she doesn't like cranberries)
1 tbsp pine nuts (any nuts will do), divided

Combine yogurt, vanilla and flax in a bowl and mix.
Spoon half of yogurt mixture into a parfait glass.  Then layer half of orange slices, 1/2 tbsp cranberries and 1/2 tbsp nuts.
Top with remaining yogurt mixture and finish off with remaining orange slices, 1/2 tbsp cranberries, and 1/2 tbsp nuts.

For Jaymi, I put all of the ingredients in a line along the counter, and let her layer her own parfait. 
More fun that way. ;)

Next, we had some free time, and did a bit more cleaning.
I figured out a fun way to encourage Jaymi to bring her dirty clothes downstairs to the laundry room.  She tossed them all down the stairs, then threw them all towards me (trying to hit me with the clothes) and then piled them into an empty hamper that she had brought down ahead of time.

We then headed out to the bank and the library, where Jaymi chose 10 books to borrow (our imposed limit on her) and I chose about 10 as well.  While I was choosing mine, she sat there and read a whole book too.
Then, we went to the used bookstore down the road from us, where we still had over $35 in store credit (from selling our books to them).  We got a few more books there - only spending 91 cents because of our credit!
After that, we visited my sister-in-law at her workplace to say a surprise hello.

Then we headed home, and, after eating lunch, Jaymi poured herself a bath.
I wanted to make some food to freeze, so after Jaymi's bath, I set her up under the big hair dryer where she read for almost an hour while her hair dried.

While she was doing that, I made:
3 Ziploc bags full of par-boiled french fries to freeze,
a batch of Avocado Egg Salad for tomorrow's lunch,
2 small containers of black-eyed peas, which I boiled and soaked so that they're ready tomorrow, to make a batch of black-eyed pea stew to freeze,
and I made a tasty salad for tonight's dinner.

Here is the recipe of the salad......
Five-Minute Salad with Goat Cheese, Herbs, and White Beans:
12 ounces of mixed salad greens
3 tbsps olive oil
2 tbsp balsamic vinegar
½ tsp Dijon
salt
pepper
1 ½ cups cherry tomatoes
1 cup cannellini beans, drained and rinsed (I tried sauteing these a bit in the frying pan - yum!)
4 ounces goat cheese, crumbled
2 tbsp basil leaves, torn
grilled chicken
candied walnuts


I also tried something new as an appy for all of us.  Everyone loved it!  It was baby endive leaves with Laughing Cow cheese spread inside them. :)

After dinner, Jaymi started to play a game of cribbage, but were interrupted when Jaymi realized how loose her top right front tooth had become.  She immediately went to the bathroom to check it out, and then asked us if we could pull it out for her.  It was getting extremely wiggly!  



She has been waiting for months for this tooth (and the one beside it) to come out, and she gets so frustrated when it doesn't.
So...she tried...


and I tried....


then Mark tried...

and succeeded!



She wanted it out, but right after it came out, she looked like she was in shock, and then felt sick to her stomach right away.  She bent over the toilet, thinking she was going to throw up.  Then, she was a bit upset that the tooth was gone.  Now (she's in bed) she is happier about it.
Wow - such a big emotional thing for a 7-yr-old's day!

YAY for toothless Jaymi!
I remember the first tooth of W's that fell out at home - she went WHITE, shook, and looked like she was about to be sick! I guess the body has its own way of dealing and the brain another ;)
